Food irradiation is the process of exposing food to ionizing radiation which kills potentially harmful bacteria and parasites in the food. Irradiated food is not radioactive and over 40 countries use irradiation as a safe and effective way to preserve their produce.

There is no doubt that irradiation improves food safety. It can kill 90-99% of the pathogens and viruses in food. This, of course, prevents disease and reduces the chance of food borne illness. When food borne diseases spread, it can be nearly impossible to trace the cause so we should irradiate food in order to prevent this from happening.

The radiation also proves fatal to microscopic bacteria so a side effect of food irradiation is that it prevents food from spoiling. Vegetables like potatoes will stop growing and will not sprout after being irradiated. Thus, vegetables and fruits have a longer shelf life at the store. This is good for both consumers and producers and results in less wasted food.

Food irradiation does have one drawback: irradiated food causes nutrient runoff, or a loss in the overall nutritional value of the food. However, the total reduction is almost immeasurable. Studies done around the world attest to the same thing: that the nutritional value lost through irradiation is only 10% of the total nutrition remained in food and roughly the same as the amount lost when food is stored in refrigerator and then cooked.
